Parisian-Inspired Coconut Milk Oatmeal Recipe

I am finally back home in San Francisco! I am incredibly grateful for the opportunity to spend 5 weeks in Paris, learning about language and gastronomy. This trip allowed me to slow down and appreciate the art of cooking. One of my goals in 2025 is to be more mindful while cooking and to find joy in the process.
Just a side note: I don't enjoy grocery shopping at all. Does anyone else feel the same way? Sometimes, I go shopping with a friend who loves it and helps me out a bit, but I hope that once I find joy in cooking, it will also change my perspective on grocery shopping.
I digress. Today, I woke up craving oatmeal, but I didn't want to make the usual kind. I felt inspired by my time in Paris, where I enjoyed many raspberries on various desserts, so I decided to make it the key ingredient for my oatmeal.

Please note that I am not a chef, but the oatmeal I made was so delicious that I had to share it. It is a straightforward and flavourful recipe. I hope to perfect this recipe! It takes just 5 minutes. I also think this same recipe should work for overnight oats.
Your List of Ingredients
1/2 cup of oatmeal
1/4 cup of coconut milk
1 teaspoon of crushed almonds
5 raspberries
2 teaspoons of brown sugar
pinch of chia seeds for garnish at the end
chocolate pieces for garnish at the end
Step 1: Let's Get Started With The Recipe
Sauté the raspberries in a medium pot with 2 teaspoons of water and 2 teaspoons of brown sugar. Let it boil for 1-2 minutes until it creates a light sauce. Turn off the stove and let the sauce rest.
Cook the oatmeal with 1 cup of water for 2.5 minutes in the microwave
Stir the oatmeal and combine it with the coconut milk
Step 2: Plating
Place the coconut milk oatmeal in a bowl
Pour the raspberries with the sauce on top of the oatmeal
Add the almonds, chia seed, and chocolate on top. And voila!
